Here’s a lightly sweet cookie recipe for anyone watching their carbohydrates and to add some fiber to their diet, too. This recipe makes approximately 15-18 cookies.
3-4 large slices pears, chopped
1 stick margarine or butter, softened
1/4 cup brown sugar
1/4 cup sugar
1/2 teaspoon vanilla extract
1 and 1/2 cups flour
1/2 teaspoon salt
1/2 teaspoon baking soda
2 tablespoons milk
1 cup semi-sweet chocolate chips
2 ounces oats
1. Preheat oven to 375 degrees.
2. Mix all ingredients together, except the flour. Add flour to mixture.
3. Drop teaspoonfuls of the cookie mixture to an ungreased cookie baking sheet.
4. Bake at 375 degrees for 12 minutes. For crispier cookies, bake 1-2 extra minutes.
5. Let cool and serve.
