Watermelon Salad 005


Here’s a cool, refreshing and healthy salad for your July 4th weekend or any occasion.




Ingredients for 4 people:

1/2 head Iceberg lettuce – chopped coarsely

1 large slice seedless water melon or 2 cups of watermelon – chopped

1 tomato – chopped finely

2 thin slices of pancetta – shredded into pieces

1-2 drizzles of olive oil

Optional:  1 tablespoon grated fresh parmesan cheese

Mix and toss all the ingredients together in a large bowl. Serve and enjoy!
