Here’s a couple of snack-time recipes.  We hope they are healthy for you. Enjoy with a hot cup of tea, coffee or juice drink.

Banana Almond Cupcakes

For diabetics, these cupcakes are slightly sweet.

1/3 cup flour

1/4 teaspoon baking soda

1 egg

2 tablespoons sugar

1/4 stick margarine melted

4 tablespoons milk

1 mashed banana

1 tablespoon slivered almonds

Preheat oven to 350 degrees. Mix all ingredients together.  Pour into 6 cupcake liners in a muffin tin. Bake 25-30 minutes until done.  Makes 6 moist cupcakes.

Tomato Parmesan Toasts

1/3 loaf of a French Baguette – Cut into 2-inch pieces and halves.

3-4 tomato slices – chopped

Few dashes of dried Basil

A sprinkle of Salt –We used Sea Salt.

1-2 tablespoons Parmesan Cheese

1-2 drizzles of Olive Oil

Preheat oven to 400 degrees. Cut 1/3 baguette into 4-6 pieces. Put in a baking pan or sheet. Top bread pieces with chopped tomatoes, dried basil, salt, parmesan cheese and drizzle with Olive Oil at the end. Bake 5 minutes or until the edges start to brown and cheese melts.  Serve warm.
